Peach Cobbler Delight

Ingredients:

  • For the Peach Filling:

    • 4 cups sliced fresh or canned peaches (if canned, drain first)

  • For the Cobbler Topping:

    • 1/2 cup unsalted butter, melted

    • 1 cup all-purpose flour

    • 1/2 cup granulated sugar

    • 1/2 cup brown sugar, packed

    • 1 tbsp baking powder

    • 1/2 tsp salt

    • 1 cup milk

    • 1 tsp vanilla extract

      Instructions:

      1. Prep: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

      2. Cook the Peaches: In a saucepan, combine the peaches, 1/2 cup sugar, and cinnamon (if using). Cook over medium heat for 5-7 minutes, until the peaches soften and the mixture becomes syrupy. Set aside.

      3. Make the Batter: In a medium bowl, whisk together the flour, remaining 1/2 cup granulated sugar, brown sugar, baking powder, and salt. Pour in the milk and vanilla, and stir until you have a smooth batter.

      4. Assemble: Pour the melted butter into the greased baking dish. Pour the batter evenly over the butter—do not stir. Gently spoon the warm peach mixture and its syrup over the top of the batter. Do not stir—this creates the perfect layered texture as it bakes.

      5. Bake: Bake for 40-45 minutes, until the top is golden brown and a toothpick inserted into the topping comes out clean.

      6. Serve: Let it cool for 10-15 minutes before serving. It’s best enjoyed warm, ideally with a scoop of vanilla ice cream.
