Bok Choy and Mushroom Stir-Fry


 Ingredients:

  • 2 tbsp sesame oil

  • 4 cups bok choy, washed and sliced

  • 2 cups assorted mushrooms (shiitake, cremini, etc.), sliced

  • 1 red bell pepper, thinly sliced

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tsp sugar

  • 1 tbsp cornstarch + 2 tbsp water (slurry)

  • Sesame seeds (for garnish)

  • Sliced green onions (for garnish)

    Instructions:

    1. Heat the oil in a large skillet or wok over medium-high heat.

    2. Sauté mushrooms and bell pepper for 3–4 minutes until slightly tender.

    3. Add bok choy, garlic, and ginger, stir-frying for 2 minutes until fragrant and the greens are wilted.

    4. Season with soy sauce, oyster sauce, and sugar, tossing to coat evenly.

    5. Pour in the cornstarch slurry, stirring until the sauce thickens (about 1 minute).

    6. Garnish with sesame seeds and green onions.

    7. Serve immediately over rice or noodles for a quick, flavorful meal.
