Instructions
Prep & Preheat: Preheat your oven to 375°F (190°C). Place the unbaked pie crust into a 9-inch pie dish and set it on a baking sheet for easy handling.
Sauté the Aromatics: In a skillet over medium heat, melt the butter. Add the chopped onion, bell pepper, celery, and garlic. Sauté for 5-7 minutes, until the vegetables are softened and fragrant. Remove from heat.
Create the Custard: In a medium mixing bowl, whisk together the mayonnaise, milk, eggs, lemon juice, Worcestershire sauce, salt, black pepper, and cayenne pepper until the mixture is completely smooth and well-combined.
Assemble the Pie: Spread the sautéed vegetable mixture evenly over the bottom of the pie crust. Scatter the raw shrimp over the vegetables. Carefully pour the custard mixture over everything, ensuring it seeps into the filling.
Add the Cheesy Topping: Sprinkle the shredded sharp Cheddar cheese evenly over the entire surface.
Bake to Perfection: Bake uncovered for 40-45 minutes, or until the center is set, the top is a beautiful golden brown, and the edges of the crust are crisp.

Shrimp Size: Medium (41/50 count) shrimp work perfectly in this recipe. If using frozen shrimp, ensure they are fully thawed and patted dry.
Cheese Choice: The sharp Cheddar provides a wonderful tang, but you can use a mild Cheddar or even a Monterey Jack for a milder flavor.
Don't Overbake: The pie is done when the center no longer jiggles when you gently shake the pan. A knife inserted near the center should come out clean.
