Ingredients:
12 hard-boiled eggs, peeled
1 (8 oz) package cream cheese, softened
½ cup mayonnaise
2 tbsp yellow mustard
1½ tbsp white vinegar
1 tsp paprika, plus extra for garnish
1 tsp salt
Pinch of black pepper
Pinch of cayenne pepper
2 tsp chopped chives, divided
Pickles (optional, for garnish)
Crackers, pretzels, or veggie sticks (for serving)
Instructions:
Prepare Eggs:
Place 6 whole hard-boiled eggs in a food processor.
Cut the remaining 6 eggs in half, remove the yolks, and add them to the food processor. Set the egg whites aside.
Blend Mixture:
Add cream cheese, mayo, mustard, vinegar, paprika, salt, black pepper, cayenne pepper, and 1 tsp chives to the food processor.
Process at high speed until smooth and fully combined.
Finish & Serve:
Finely chop the reserved egg whites and gently fold them into the blended mixture.
Transfer to a serving bowl and sprinkle with remaining chives and a dusting of paprika.
Garnish with pickles (if using).
Serve with crackers, pretzels, or fresh veggies.
