🧾 Ingredients

For the Vanilla Custard:

  • 2 cups whole milk

  • ½ cup granulated sugar

  • ¼ cup cornstarch

  • 4 large egg yolks

  • 2 teaspoons vanilla extract

  • 2 tablespoons unsalted butter

For the Chocolate Custard:

  • 2 cups whole milk

  • ½ cup granulated sugar

  • ¼ cup cornstarch

  • 4 large egg yolks

  • 2 tablespoons unsweetened cocoa powder

  • 1 teaspoon vanilla extract

  • 2 tablespoons unsalted butter

For Garnish:

  • Unsweetened cocoa powder, for dusting

  • Optional: Chocolate shavings, fresh berries, or whipped cream

👩‍🍳 Instructions

1. Prepare the Vanilla Custard

  • In a medium saucepan, heat the 2 cups of milk over medium heat until it just begins to simmer.

  • Meanwhile, in a separate bowl, vigorously whisk together the ½ cup sugar, ¼ cup cornstarch, and 4 egg yolks until the mixture is smooth, thick, and pale yellow.

  • While whisking constantly, slowly pour about half of the hot milk into the egg mixture to temper it. Then, pour the entire mixture back into the saucepan with the remaining milk.

  • Return the saucepan to medium heat. Cook, stirring constantly with a whisk, until the custard thickens and begins to bubble gently.

  • Remove from heat and stir in the 2 tablespoons of butter and 2 teaspoons of vanilla extract until fully incorporated and smooth.

  • Pour the custard into a clean bowl. Press a layer of plastic wrap directly onto the surface to prevent a skin from forming. Refrigerate until completely cool and set.

2. Prepare the Chocolate Custard

  • Follow the exact same process as the vanilla custard, but whisk the 2 tablespoons of cocoa powder in with the sugar, cornstarch, and egg yolks at the very beginning.

  • After removing from heat, stir in the 2 tablespoons of butter and 1 teaspoon of vanilla extract.

3. Assemble the Layers

  • Once both custards are completely cooled and set, you can begin layering. Using glasses, jars, or a single serving dish, spoon the custard to create distinct layers.

  • For a classic look, start with a layer of vanilla custard, then top with a layer of chocolate custard. You can repeat the layers for a parfait effect or keep it simple with one of each.

  • Gently tap the container on the counter to settle the layers and remove any air bubbles.

4. Chill and Serve

  • Cover the dessert and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the texture to become perfectly firm.

  • Just before serving, dust the top with cocoa powder and add your chosen garnishes like chocolate shavings, a dollop of whipped cream, or fresh berries.

Chef's Tip: For a flawless, lump-free custard, temper the eggs slowly and stir constantly during cooking. Placing the plastic wrap directly on the surface is non-negotiable for that perfectly smooth, skin-free finish!
