Philly Cheesesteak Stuffed Peppers

Enjoy all the iconic, savory flavors of a classic Philly cheesesteak in a delicious, low-carb package. Tender bell peppers are stuffed with a rich mixture of seasoned ground beef, sautéed mushrooms, and onions, then smothered in melted mozzarella cheese for the ultimate comfort food.

Yields: 3 stuffed peppers
Prep time: 20 minutes
Cook time: 45 minutes

🧾 Ingredients

  • 3 large bell peppers (any color)

  • 1 lb ground beef

  • 1 onion, chopped

  • 8 oz mushrooms, chopped

  • 1 cup beef broth

  • 2 tbsp ketchup

  • 1 tbsp Worcestershire sauce

  • 8 oz shredded mozzarella cheese

  • Salt and black pepper, to taste

  • Oil for coating

👩‍🍳 Instructions

1. Prepare the Oven and Peppers
Preheat your oven to 350°F (175°C). Slice the bell peppers in half from top to bottom and remove the stems, ribs, and seeds. Arrange them in a baking dish, lightly coat with oil, and set aside.

2. Cook the Beef and Aromatics
In a large skillet over medium-high heat, cook the ground beef and chopped onion together. Cook until the beef is thoroughly browned and the onion has softened. Drain off any excess grease.

3. Build the Filling
Add the chopped mushrooms to the skillet and cook for another 2-3 minutes until they begin to soften. Pour in the beef broth, ketchup, and Worcestershire sauce. Season generously with salt and pepper. Stir everything to combine.

4. Simmer to Perfection
Bring the mixture to a simmer. Let it cook, stirring occasionally, for 5-7 minutes, or until the liquid has reduced and the filling has a thick, cohesive consistency.

5. Assemble the Stuffed Peppers
Spoon the beef filling evenly into the prepared bell pepper halves. Top each one generously with the shredded mozzarella cheese.

6. Bake
Cover the baking dish loosely with foil and bake for 45 minutes. For a beautifully browned and bubbly cheese top, remove the foil for the last 5-10 minutes of baking. The peppers should be tender when pierced with a fork.

7. Serve
Allow the stuffed peppers to cool for 5-10 minutes before serving. They are perfect alongside a fresh green salad or your favorite vegetable side.

Chef's Tip: For an authentic cheesesteak twist, substitute the mozzarella with provolone or Cheez Whiz! You can also add finely sliced green bell pepper to the beef filling for an extra layer of flavor.
