Pineapple Bake

This beloved, old-fashioned dessert is the epitome of simple, comforting sweetness. With a rich, custardy texture and a caramelized, cinnamon-speckled top, it’s like a pineapple pie without the crust. Serve it warm with a scoop of vanilla ice cream for a truly irresistible treat.

Ingredients

  • 1 can (20 oz) crushed pineapple in juice, undrained

  • ¾ cup granulated sugar

  • 2 large eggs

  • 2 tablespoons cornstarch

  • 2 teaspoons vanilla extract

  • 1 ½ tablespoons butter, cut into small pats

  • 1 teaspoon ground cinnamon

Instructions

1. Prepare for Baking:
Preheat your oven to 350°F (175°C). Grease an 8x8-inch or 9x9-inch baking dish with butter or non-stick spray.

2. Combine the Filling:
In a medium mixing bowl, whisk the eggs until smooth. Add the entire can of crushed pineapple (with its juice), granulated sugar, cornstarch, and vanilla extract. Whisk everything together until the cornstarch is fully dissolved and the mixture is well-blended.

3. Assemble the Bake:
Pour the pineapple mixture into the prepared baking dish, ensuring it's spread evenly. Dot the surface evenly with the small pats of butter. Finally, sprinkle the ground cinnamon uniformly over the top.

4. Bake to Perfection:
Bake for 40-50 minutes, or until the top is a deep golden brown and the center is set (it should only jiggle slightly when you gently shake the pan).

5. Serve and Enjoy:
