A creamy, cheesy, and comforting low-carb dish that’s packed with flavor! Tender chicken breasts are smothered in a rich mushroom and cheddar sauce, then baked to perfection—perfect for a satisfying, guilt-free meal.
Ingredients (Serves 4):
For the Chicken:
4 boneless, skinless chicken breasts
½ tsp salt
¼ tsp black pepper
1 tbsp olive oil
For the Cheese Sauce:
1 tbsp butter
8 oz (225g) mushrooms, sliced
2 cloves garlic, minced
1 cup (240ml) heavy cream
1 cup (100g) shredded cheddar cheese
¼ tsp dried thyme
¼ tsp salt (or to taste)
¼ tsp black pepper
Instructions:
1. Sear the Chicken:
Preheat oven to 375°F (190°C).
Season chicken breasts with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Sear chicken for 3-4 minutes per side until golden brown.
Transfer skillet to the oven and bake for 15-20 minutes, or until chicken reaches 165°F (74°C). Remove and set aside.
2. Make the Cheese Sauce:
In the same skillet, melt butter over medium heat.
Add mushrooms and sauté until softened and golden (5-6 minutes).
Stir in garlic and cook for 30 seconds until fragrant.
Pour in heavy cream and bring to a gentle simmer.
Gradually add cheddar cheese, stirring until melted and smooth.
Season with thyme, salt, and pepper. Simmer for 2-3 minutes to thicken.
3. Assemble & Bake:
Return chicken to the skillet, nestling it into the sauce.
Spoon extra sauce and mushrooms over each breast.
Bake for 10-15 minutes until bubbly and golden.
4. Serve & Enjoy!
Let rest for 2-3 minutes before serving.
Garnish with fresh parsley if desired.
Pair with steamed greens, cauliflower rice, or a crisp salad for a complete low-carb meal.
