Ingredients (Serves 4):

For the Chicken:

  • 4 boneless, skinless chicken breasts

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tbsp olive oil

For the Cheese Sauce:

  • 1 tbsp butter

  • 8 oz (225g) mushrooms, sliced

  • 2 cloves garlic, minced

  • 1 cup (240ml) heavy cream

  • 1 cup (100g) shredded cheddar cheese

  • ¼ tsp dried thyme

  • ¼ tsp salt (or to taste)

  • ¼ tsp black pepper

    Instructions:

    1. Sear the Chicken:

    • Preheat oven to 375°F (190°C).

    • Season chicken breasts with salt and pepper.

    • Heat olive oil in a large oven-safe skillet over medium-high heat.

    • Sear chicken for 3-4 minutes per side until golden brown.

    • Transfer skillet to the oven and bake for 15-20 minutes, or until chicken reaches 165°F (74°C). Remove and set aside.

    2. Make the Cheese Sauce:

    • In the same skillet, melt butter over medium heat.

    • Add mushrooms and sauté until softened and golden (5-6 minutes).

    • Stir in garlic and cook for 30 seconds until fragrant.

    • Pour in heavy cream and bring to a gentle simmer.

    • Gradually add cheddar cheese, stirring until melted and smooth.

    • Season with thyme, salt, and pepper. Simmer for 2-3 minutes to thicken.

    3. Assemble & Bake:

    • Return chicken to the skillet, nestling it into the sauce.

    • Spoon extra sauce and mushrooms over each breast.

    • Bake for 10-15 minutes until bubbly and golden.

    4. Serve & Enjoy!

    • Let rest for 2-3 minutes before serving.

    • Garnish with fresh parsley if desired.
