  • 2 tbsp oil or butter

For the Gravy & Potatoes:

  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth (low sodium preferred)
  • ½ cup heavy cream or milk (optional)
  • 4–5 small potatoes, peeled & sliced or quartered
  • Fresh thyme or chopped parsley (for garnish)

    Instructions

    1. Season & Sear Pork Chops – Pat dry, season well, dredge in flour, and sear 3–4 minutes per side in oil or butter. Remove & set aside.
    2. Prepare Gravy – Cook onions for 5–7 minutes, add garlic, then stir in flour and cook for 2 minutes.
    3. Add Liquids – Slowly pour in broth, whisking to avoid lumps. Add cream or milk, simmer until thickened.
    4. Simmer with Potatoes – Add potatoes, return pork chops, cover, and simmer for 30–40 minutes until tender.
    5. Serve Hot – Garnish with thyme or parsley, ladle gravy over chops & potatoes.
