Smothered Pork Chops with Potatoes in Gravy
A comfort food classic, smothered pork chops bring rich flavors, tender meat, and creamy gravy for a satisfying family meal.
Ingredients
For the Pork Chops:
- 4 bone-in or boneless pork chops (¾ to 1 inch thick)
- Salt & black pepper, to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 2 tbsp all-purpose flour (for dredging)
- 2 tbsp oil or butter
For the Gravy & Potatoes:
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups chicken broth (low sodium preferred)
- ½ cup heavy cream or milk (optional)
- 4–5 small potatoes, peeled & sliced or quartered
- Fresh thyme or chopped parsley (for garnish)
Instructions
- Season & Sear Pork Chops – Pat dry, season well, dredge in flour, and sear 3–4 minutes per side in oil or butter. Remove & set aside.
- Prepare Gravy – Cook onions for 5–7 minutes, add garlic, then stir in flour and cook for 2 minutes.
- Add Liquids – Slowly pour in broth, whisking to avoid lumps. Add cream or milk, simmer until thickened.
- Simmer with Potatoes – Add potatoes, return pork chops, cover, and simmer for 30–40 minutes until tender.
- Serve Hot – Garnish with thyme or parsley, ladle gravy over chops & potatoes.
