Ingredients

  • 1 can (14 oz) sweetened condensed milk

  • 3 tablespoons unsweetened cocoa powder, sifted

  • 1 tablespoon unsalted butter, plus more for greasing

  • 1 cup chocolate sprinkles

Instructions

1. Cook the Mixture
In a medium saucepan, melt the tablespoon of butter over medium heat. Add the sifted cocoa powder and whisk vigorously for about 30 seconds until a smooth paste forms. Pour in the sweetened condensed milk and stir until fully combined.

2. Thicken the Mixture
Reduce the heat to medium-low. Cook the mixture, stirring constantly with a wooden spoon or spatula, for 10-14 minutes. It is ready when it becomes very thick, pulls away from the bottom of the pan as you stir, and slides as a single mass when you tilt the pan.

3. Chill the Dough
Immediately transfer the hot mixture to a greased plate or shallow dish. Spread it into an even layer to help it cool quickly. Cover with plastic wrap and refrigerate for 1-2 hours, or until firm enough to handle.

4. Roll and Coat
Place the chocolate sprinkles in a shallow bowl. Lightly grease your palms with a bit of butter to prevent sticking. Scoop about 1 tablespoon of the chilled mixture and roll it into a smooth, 1-inch ball between your greased hands.

5. Final Chill
Immediately roll the ball in the sprinkles until fully covered. Place the finished brigadeiro in a paper cup or on a serving platter. Repeat with the remaining mixture. For the best texture, refrigerate the brigadeiros until you are ready to serve.

Tips for Perfect Brigadeiros

  • Constant Stirring is Crucial: Do not stop stirring during the cooking process to prevent the milk from burning on the bottom of the pan.

  • The "Pan Test": The most reliable test for doneness is dragging your spoon through the mixture; if it leaves a clean path on the bottom of the pan for a few seconds, it's ready.

  • Grease Your Hands: This is a non-negotiable step to prevent the sticky mixture from clinging to your fingers.
