Fresh peach salsa recipe

This vibrant salsa is a celebration of summer in a bowl. Juicy, sweet peaches are paired with a zesty mix of lime, cilantro, and a subtle kick of jalapeño. The result is a refreshing and versatile condiment that's perfect as a dip with tortilla chips or as a bright topping for grilled meats and seafood.

Yields: About 2 cups
Prep Time: 15 minutes
Chill Time: 20-30 minutes

Ingredients

  • 3 ripe peaches, peeled, pitted, and finely diced

  • 1 red bell pepper, seeds removed, finely diced

  • ½ small red onion, finely chopped

  • 1 jalapeño pepper, seeds and ribs removed, minced

  • ¼ cup fresh cilantro, finely chopped

  • Juice of 1 lime (about 2 tablespoons)

  • Salt, to taste

  • Optional: 1 teaspoon honey or agave nectar (if peaches are less sweet)

Instructions

1. Prepare the Ingredients:
Peel and dice the peaches into uniform, bite-sized pieces. Finely dice the red bell pepper and red onion. For a milder salsa, ensure the jalapeño is thoroughly seeded before mincing.

2. Combine the Salsa:
In a medium-sized bowl, gently combine the diced peaches, red bell pepper, red onion, minced jalapeño, and chopped cilantro.

3. Season and Toss:
Drizzle the fresh lime juice over the mixture and add a generous pinch of salt. Gently toss everything together until well combined.

4. Taste and Adjust:
Do a taste test. If your peaches are not very sweet, add the optional honey to balance the acidity. For more tang, add an extra squeeze of lime. Adjust salt if needed.

5. Chill to Marry the Flavors:
For the best flavor, cover the bowl and refrigerate the salsa for at least 20-30 minutes before serving. This allows the flavors to meld beautifully.

Serving Suggestions

  • As a Topping: Elevate grilled chicken, fish (like salmon or halibut), shrimp, or pork chops. It's also fantastic on fish or black bean tacos.

  • As a Dip: Serve with crispy tortilla chips, pita chips, or even cinnamon-dusted chips for a sweet-and-salty snack.

  • On Toast: Spoon over avocado toast or cream cheese-slathered bagels for a deliciously fresh breakfast or lunch.

  • With Cheese: Pair with a creamy goat cheese or burrata for an impressive appetizer.
