 Refreshing Cucumber, Tomato, and Red Onion  Salad

Ingredients:

  • 2 medium  cucumbers, thinly sliced

  • 1 medium  red onion, thinly sliced

  • 3 medium tomatoes, chopped

  • ¼ cup olive oil

  • ¼ cup red wine vinegar (or balsamic vinegar for variation)

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 tablespoon fresh dill, chopped

Optional Add-ins:

  • Crumbled feta cheese

  • Sliced avocado

  • Pinch of red pepper flakes (for heat)

  • 1 tablespoon Greek yogurt or sour cream (for creaminess)

    Instructions:

    1. Prepare the Vegetables:
      In a large mixing bowl, combine the sliced cucumbers, red onion, and chopped tomatoes.

    2. Make the Dressing:
      In a separate small bowl, whisk together the olive oil, vinegar, sugar, salt, and black pepper until the sugar fully dissolves.

    3. Assemble the Salad:
      Pour the dressing over the vegetables and toss gently to coat evenly. Sprinkle with fresh dill and toss again.

    4. Chill & Serve:
      Cover and refrigerate for at least 30 minutes to let the flavors meld. Serve chilled.

    Tips:

    • For best results, let the salad sit for an hour before serving for deeper flavor.

    • Add feta or avocado just before serving to maintain texture.

    • If making ahead, drain excess liquid before serving for a crisper salad.
