Refreshing Cucumber, Tomato, and Red Onion Salad
Ingredients:
2 medium cucumbers, thinly sliced
1 medium red onion, thinly sliced
3 medium tomatoes, chopped
¼ cup olive oil
¼ cup red wine vinegar (or balsamic vinegar for variation)
1 tablespoon sugar
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon fresh dill, chopped
Optional Add-ins:
Crumbled feta cheese
Sliced avocado
Pinch of red pepper flakes (for heat)
1 tablespoon Greek yogurt or sour cream (for creaminess)
Instructions:
Prepare the Vegetables:
In a large mixing bowl, combine the sliced cucumbers, red onion, and chopped tomatoes.Make the Dressing:
In a separate small bowl, whisk together the olive oil, vinegar, sugar, salt, and black pepper until the sugar fully dissolves.Assemble the Salad:
Pour the dressing over the vegetables and toss gently to coat evenly. Sprinkle with fresh dill and toss again.Chill & Serve:
