This one-pan wonder combines tender shrimp, cheesy tortellini, and a rich, homemade Alfredo sauce for a restaurant-quality meal that’s surprisingly easy to make.
Ingredients:
Cheese tortellini
Shrimp, peeled and deveined
Salted butter
Fresh Roma tomato, diced
Minced garlic cloves
Fresh basil leaves, chopped (plus more for garnish)
All-purpose flour
Heavy whipping cream
Shredded parmesan cheese (plus more for serving)
Salt and black pepper, to taste
Instructions:
STEP 1: Cook the Tortellini
Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package directions. Once cooked, drain well and set aside.STEP 2: Sauté the Shrimp
While the tortellini cooks, melt the butter in a large skillet over medium-high heat. Add the shrimp in a single layer and season with a pinch of salt and pepper. Cook for 2-3 minutes, flipping halfway through, until they are pink and opaque. Remove the shrimp from the skillet and set aside.STEP 3: Build the Sauce
Reduce the heat to medium. In the same skillet, add the diced tomato, garlic, and chopped basil. Sauté for about 1 minute until fragrant. Sprinkle the flour over the mixture and stir continuously for another minute to form a paste.STEP 4: Create the Alfredo
Gradually pour in the heavy whipping cream, whisking constantly to avoid lumps. Let the sauce simmer gently for 1-2 minutes until it begins to thicken. Reduce the heat to low and stir in the shredded parmesan cheese until it’s melted and the sauce is smooth.STEP 5: Combine and Serve
Add the drained tortellini and cooked shrimp back to the skillet. Gently toss everything until it’s evenly coated in the creamy Alfredo sauce. Heat through for another minute. Serve immediately, garnished with extra fresh basil and a sprinkle of parmesan cheese.
