Super Soft Vanilla Breakfast Cake – Simple & Fluffy Morning Bliss
This cake is sweet, tender, and made for mornings. With pantry basics and a light vanilla scent, it’s a quick bake that works solo or dressed up with fruit and toppings.
Ingredients
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 cup milk
- ½ cup vegetable oil or melted butter
- 2 large eggs
- 2 tsp vanilla extract
Directions
Preheat oven to 350°F (175°C) Grease or line a 9×9-inch pan with parchment.
Mix dry ingredients In a bowl, whisk together flour, sugar, baking powder, and salt.
Mix wet ingredients In another bowl, whisk milk, oil/butter, eggs, and vanilla until smooth.
Combine Add wet to dry and gently mix until just combined—don’t overmix.
Bake Pour into pan, smooth top. Bake 25–30 mins, or until a toothpick comes out clean.
Cool & Serve Let it cool. Slice and enjoy plain, or dust with powdered sugar, serve with fruit, or drizzle with honey.
