Ingredients
4 large yellow onions, peeled and sliced into ¼-inch rounds
1 tbsp olive oil, plus extra for drizzling
½ tsp fresh thyme, finely chopped
½ tsp salt, plus more to taste
¼ tsp freshly ground black pepper
1 cup heavy cream
2 tsp Dijon mustard
½ cup freshly grated Asiago cheese, divided
Instructions
1. Roast the Onions
Preheat oven to 450°F (230°C). Lightly grease a baking dish with olive oil.
Arrange onion slices in a single layer. Drizzle with olive oil, then sprinkle with thyme, salt, and pepper.
Roast for 20 minutes, or until the onions begin to soften and caramelize at the edges.
2. Make the Cream Sauce
In a small saucepan, warm the heavy cream over medium heat until it just begins to simmer.
Whisk in the Dijon mustard and ¼ cup of Asiago cheese until melted and smooth.
3. Assemble & Bake
Remove onions from the oven and pour the cream sauce evenly over them.
Sprinkle the remaining ¼ cup of Asiago cheese on top.
Cover with foil and bake for 20 more minutes, or until bubbly and golden.
