Creamy Baked Onions with Asiago Cheese: A Luxurious Side Dish

Indulge in tender, caramelized onions smothered in a velvety  Asiago cheese sauce—a decadent yet simple side that elevates any meal.

Ingredients

  • 4 large yellow onions, peeled and sliced into ¼-inch rounds

  • 1 tbsp  olive oil, plus extra for drizzling

  • ½ tsp fresh thyme, finely chopped

  • ½ tsp salt, plus more to taste

  • ¼ tsp freshly ground black pepper

  • 1 cup  heavy cream

  • 2 tsp Dijon mustard

  • ½ cup freshly grated Asiago cheese, divided

    Instructions

    1. Roast the Onions

    • Preheat oven to 450°F (230°C). Lightly grease a  baking dish with  olive oil.

    • Arrange onion slices in a single layer. Drizzle with olive oil, then sprinkle with thyme, salt, and pepper.

    • Roast for 20 minutes, or until the onions begin to soften and caramelize at the edges.

    2. Make the Cream Sauce

    • In a small saucepan, warm the  heavy cream over medium heat until it just begins to simmer.

    • Whisk in the Dijon mustard and ¼ cup of Asiago cheese until melted and smooth.

    3. Assemble & Bake

    • Remove onions from the oven and pour the cream sauce evenly over them.

    • Sprinkle the remaining ¼ cup of Asiago cheese on top.

    • Cover with foil and bake for 20 more minutes, or until bubbly and golden.

    4. Serve & Enjoy

    • Let rest for 5 minutes before serving. Garnish with extra thyme if desired.

    • Pairs beautifully with roasted meats, grilled chicken, or crusty bread.

Tip: For extra richness, broil for 1–2 minutes at the end for a crispy cheese topping!
