Total Time: 30 minutes
Servings: 4
Ingredients:
1 lb (450g) mushrooms (cremini, button, or shiitake), cleaned and halved (or left whole if small)
3 tbsp unsalted butter, melted
2 tbsp olive oil
4 garlic cloves, minced
1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
1 tbsp fresh parsley, chopped (plus extra for garnish)
½ tsp salt (or to taste)
¼ tsp black pepper
½ tsp red pepper flakes (optional, for heat)
1 tbsp lemon juice (optional, for brightness)
¼ cup grated Parmesan cheese (optional, for serving)
Instructions:
Preheat Oven:
Preheat your oven to 400°F (200°C).
Prepare the Garlic Butter Sauce:
In a small bowl, mix melted butter, olive oil, minced garlic, thyme, parsley, salt, black pepper, and red pepper flakes (if using).
Coat the Mushrooms:
Place the mushrooms in a large mixing bowl and pour the garlic butter sauce over them. Toss well to coat evenly.
Roast the Mushrooms:
Spread the mushrooms in a single layer on a baking sheet (lined with parchment paper for easy cleanup).
Roast for 18-20 minutes, stirring halfway, until the mushrooms are golden brown and tender.
Finish & Serve:
Drizzle with lemon juice (if using) and sprinkle with extra parsley and Parmesan cheese (optional).
Serve warm as a side dish, over pasta, or with crusty bread to soak up the garlic butter sauce.
Tips:
For extra caramelization, broil for 1-2 minutes at the end (watch closely to avoid burning).
Substitute herbs with rosemary or oregano for variation.
Add a splash of white wine to the butter sauce for extra flavor.
Enjoy your Garlic Butter Roasted Mushrooms—a rich, savory, and irresistible dish!
