Ingredients:

  • 1 cup fresh strawberries, hulled and chopped

  • 1/4 cup erythritol (or your preferred keto sweetener)

  • 1 cup heavy whipping cream

  • 1 tsp vanilla extract

  • 1 tsp lemon juice

  • A pinch of salt

Instructions:

  1. Create the Strawberry Base: In a blender or food processor, purée the strawberries until completely smooth. For an ultra-silky texture, strain the purée through a fine-mesh sieve to remove the seeds.

  2. Sweeten the Purée: In a medium bowl, combine the strawberry purée, erythritol, vanilla extract, and lemon juice. Stir until the sweetener is fully dissolved and the mixture is well-blended.

  3. Whip to Stiff Peaks: In a separate, chilled large bowl, whip the heavy cream with a pinch of salt until stiff peaks form.

  4. Fold Gently: Add the strawberry mixture to the whipped cream. Using a spatula, gently fold the two together until just combined and no white streaks remain. Be careful not to overmix and deflate the airy cream.

  5. Chill to Set: Divide the mousse into individual serving glasses. Cover and refrigerate for at least 1 hour, or until firmly set.

  6. Serve: Garnish with fresh strawberry slices and a mint leaf for a beautiful finish.
