Ingredients:
1 cup fresh strawberries, hulled and chopped
1/4 cup erythritol (or your preferred keto sweetener)
1 cup heavy whipping cream
1 tsp vanilla extract
1 tsp lemon juice
A pinch of salt
Instructions:
Create the Strawberry Base: In a blender or food processor, purée the strawberries until completely smooth. For an ultra-silky texture, strain the purée through a fine-mesh sieve to remove the seeds.
Sweeten the Purée: In a medium bowl, combine the strawberry purée, erythritol, vanilla extract, and lemon juice. Stir until the sweetener is fully dissolved and the mixture is well-blended.
Whip to Stiff Peaks: In a separate, chilled large bowl, whip the heavy cream with a pinch of salt until stiff peaks form.
