🍒 Never Fail Fruit Cake — Moist, Chewy, and Holiday-Ready
Forget everything you thought you knew about fruitcake. This version is rich, chewy, and packed with candied fruit, dates, coconut, and pecans—all bound together with sweetened condensed milk for a texture that’s more candy than cake. It’s festive, foolproof, and keeps beautifully in the fridge for weeks (or longer!).
🧂 Ingredients
1 lb candied cherries
1 lb candied pineapple
1 lb pitted dates
1 lb chopped pecans
4 (8 oz) packages flaked coconut
3 tbsp all-purpose flour
2 (14 oz) cans sweetened condensed milk
👩🍳 Instructions
Prep the Pan Preheat oven to 300°F (150°C). Grease a 10-inch tube pan and line the bottom with greased parchment paper.
Mix the Batter Chop fruit and nuts. In a large bowl, combine with coconut. Stir in flour, then add condensed milk. Mix thoroughly.
Bake Pack mixture firmly into prepared pan. Bake for 1½ hours, until golden and set.
Cool and Unmold Run a knife around the edge. Remove pan rim. When barely warm, remove tube bottom and parchment.
