Ingredients:
200g (7oz) penne pasta
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 red bell pepper, thinly sliced
200g (7oz) raw king prawns, peeled & deveined
1 tbsp Cajun seasoning
150ml (⅔ cup) double cream
100ml (½ cup) chicken stock
50g (¼ cup) grated Parmesan cheese
Salt & black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Cook the pasta: Boil the penne in salted water according to package instructions until al dente. Drain and set aside.
Sauté vegetables: In a large pan, heat olive oil over medium heat. Add the onion and cook for 5 mins until soft. Stir in the garlic and bell pepper, cooking for 2-3 mins more.
Cook the prawns: Add the prawns and Cajun seasoning, stirring until the prawns turn pink and are cooked through (3-4 mins).
Make the sauce: Pour in the double cream and chicken stock, stirring well. Bring to a gentle simmer.
Add cheese & season: Stir in the Parmesan until melted and the sauce is creamy. Season with salt and pepper to taste.
Combine & serve: Toss the cooked pasta in the sauce until well coated. Garnish with fresh parsley and serve immediately.
