Roasted Beet & Goat Cheese Log

 

A vibrant, elegant appetizer featuring  creamy goat  cheese, earthy roasted beets, and crunchy pistachios—perfect for entertaining or a gourmet snack!

Ingredients

For the Beet Log:

  • 2 large beets, roasted and peeled

  • 6 oz goat cheese, softened

  • 1/4 cup chopped pistachios

  • 1 tbsp honey

  • 1 tbsp fresh parsley, chopped

  • 1/2 tsp salt

  • 1/4 tsp black pepper

For Garnish & Serving:

  • 1/4 cup whole or crushed pistachios

  • Fresh parsley, finely chopped

  • Crackers or toasted bread

    Instructions

    1. Roast the Beets:

    • Preheat oven to 400°F (200°C). Wrap whole beets in foil and roast for 45-50 minutes until tender.

    • Let cool, then peel and slice thinly (use a mandoline for even slices).

    2. Prepare the Filling:

    • In a bowl, combine goat  cheese, chopped pistachios, honey, parsley, salt, and pepper. Mix until smooth and  creamy.

    3. Assemble the Log:

    • Lay a sheet of plastic wrap on a flat surface. Arrange beet slices in an overlapping rectangular layer.

    • Spread the goat cheese mixture evenly over the beets.

    • Using the plastic wrap, carefully roll into a tight log. Twist the ends to secure.

    • Refrigerate for 1-2 hours to firm up.

    4. Garnish & Serve:

    • Unwrap the log and roll it in crushed pistachios and parsley.

    • Slice into rounds and serve with  crackers or toasted bread.
