1 lb (450g) button or cremini mushrooms (whole or halved if large)
1 cup all-purpose flour
1/2 cup cornstarch (for extra crispiness)
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika (optional, for a smoky flavor)
1/2 tsp black pepper
1 tsp salt (adjust to taste)
1 cup cold club soda or beer (or use water/milk for a non-alcoholic version)
1 egg (optional, for richer batter)
Oil for deep frying (vegetable, canola, or peanut oil)
For Serving (Optional):
Ranch dressing
Garlic aioli
Lemon wedges
Fresh parsley (chopped)
Instructions:
1. Prepare the Mushrooms:
Clean the mushrooms gently with a damp cloth or brush. If they’re large, cut them in half or quarters for even cooking.
2. Make the Batter:
In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.
Add cold club soda (or beer/water/milk) and egg (if using). Mix until smooth (the batter should be slightly thick but pourable).
3. Heat the Oil:
Fill a deep pot or frying pan with 1-2 inches of oil and heat to 350–375°F (175–190°C).
4. Coat & Fry the Mushrooms:
Dip each mushroom into the batter, letting excess drip off.
Carefully place a few mushrooms into the hot oil (don’t overcrowd).
Fry for 2–3 minutes until golden brown and crispy.
Remove with a slotted spoon and drain on a paper towel-lined plate.
5. Serve Hot:
Sprinkle with extra salt if needed.
Serve with ranch, aioli, or lemon wedges and garnish with fresh parsley.
Tips for Extra Crispiness:
Use cold liquid (club soda/beer) for a lighter batter.
Double fry: Fry once at 350°F, let rest, then fry again at 375°F for extra crunch.
Add 1 tsp baking powder to the batter for extra puffiness.
