Loaded Hummus Recipe

 

Ingredients:

Base:

  • 2 cups hummus (store-bought or homemade)

Toppings:

  • 1½ cups cherry tomatoes, halved or quartered

  • ½ cup sliced cucumbers (about 4 mini cucumbers)

  • ¼ cup thinly sliced red onion or shallot

  • 2-3 pepperoncini peppers, thinly sliced

  • ¼ cup pitted and chopped kalamata olives (optional)

  • 1 clove garlic, minced

  • ½ tsp dried oregano

  • ¼ cup olive oil

  • 1-2 tbsp finely chopped fresh herbs (parsley, mint, or chives)

  • Salt and pepper, to taste

  • Sumac or paprika, for sprinkling

Optional Additions:

  • Toasted pine nuts

  • Lemon wedges, for serving

    Instructions:

    1. Prepare the Veggie Topping:

      • In a bowl, combine cherry tomatoes, cucumbers, red onion, garlic, and olives (if using).

      • Drizzle with olive oil, then add oregano, salt, and pepper. Toss gently.

      • Stir in fresh herbs and set aside.

    2. Assemble the Hummus Platter:

      • Spread hummus evenly on a serving platter or shallow bowl.

      • Spoon the veggie mixture over the hummus.

    3. Garnish & Serve:

      • Sprinkle with sumac or paprika and toasted pine nuts (if using).

      • Garnish with extra fresh herbs and serve with lemon wedges on the side.

      • Enjoy with warm pita bread, pita chips, or fresh veggies for dipping!
