Slow Cooker chicken and dumplings

 

A comforting, hearty dish that’s easy to prepare and perfect for cozy nights. Tender chicken simmers in a creamy, flavorful broth, topped with fluffy dumplings for the ultimate comfort food.

Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts or thighs

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 3 tbsp  butter

  • 1 tsp poultry seasoning

  • 1 tsp dried parsley

  • ½ tsp black pepper

  • ½ tsp salt (adjust to taste)

  • 4 cups chicken broth

  • 1 (10.5 oz) can cream of chicken soup

  • 1 (16 oz) can refrigerated biscuit dough (or homemade dumplings)

  • Optional: 1 cup frozen mixed vegetables (peas, carrots, corn)

  • Optional thickener: 2 tbsp cornstarch + 2 tbsp water

    Instructions:

    1. Layer Ingredients: Place chicken in the slow cooker. Add diced onion, garlic,  butter, poultry seasoning, parsley, salt, and pepper.

    2. Add Liquids: Pour in chicken broth and cream of chicken soup. Stir gently to combine.

    3. Cook Chicken: Cover and cook on Low for 6-7 hours or High for 4 hours, until chicken is tender.

    4. Shred Chicken: Remove chicken, shred with forks, and return to the slow cooker. (Optional: For a thicker broth, mix cornstarch with water and stir in.)

    5. Add Dumplings: Cut biscuit dough into quarters (or roll homemade dumplings) and place on top of the soup. Cover and cook on High for 1-2 hours, until dumplings are fluffy and cooked through. (Add frozen veggies now, if using.)

    6. Serve: Gently stir dumplings into the broth and enjoy hot!

    Tip: For extra richness, stir in a splash of heavy cream before serving.
